Cocktail Shrimp Stir Fried with Pu'er Tea

 

The Yunnan Province is the origin place of tea trees. The most famous tea in Yunnan is the Pu'er Tea. The Pu'er tea has many benefits such as refreshment, dispelling the effect of alcohol, keeping good gastric function and burning the extra fat of human body. Many Yunnan people like to use the Pu'er tea for their daily food. The Pu'er tea and cocktail shrimp is one of the popular dishes made by the Pu'er tea. This dish is quite different from the Longjing Shrimp in the Zhejiang Province.

Ingredient:

Pu'er tea, compressed: 15 g
Cocktail shrimp: 350 g
Garlic: 40g, minced.
Green or red fresh pepper: 20g

Salt, pepper, sugar as personal flavour. Chinese cooking wine: 1 tsp


Preparation:

1. Put the tea in boiling water until it is soft, separate the soup and leaves.
2. Split the shrimp, stir fry briefly in hot oil. Put them in a dish.
3. More oil in the pot, using high heat, drop the green/red peppers, minced garlic and cooking wine. Then put one tea spoon of tea soup in the pot.
4. Put the shrimp and tea leaves in the pot, add the other flavours. Using high heat to stir fry till it is ready to serve.
