Some Hui, Miao and Yi people live in the LiuPan Mountain area in GanSu Province. GuanGuan Tea (Pot tea) is their favorite drink. People usually have a fire pile in the middle of their houses. They put a pot on the fire with half-filled water, after the water is boiling, they add 8-10 grams of tea in the water, and then fill the pot full of water. When the water is boiling again, the GuanGuan Tea is ready.

Many people like to add some flavor in the tea such as salt and SiChuan pepper. Some rich families use walnut and come cereal. Sometimes baked tea leaves are also introduced. GuanGuan tea is usually good for 3-4 brews.

GuanGuan tea is very strong for many visitors, but the local people have enjoyed it for generations. They like to sit around the fire and make GuanGuan tea, and toast sweet patatos, pancakes and other food at the same time. GuanGuan tea is a necessary part of local meals.
