Azuki Bean and Pu'er Tea Soup

 

Ingredient:

Azuki Bean (red Bean): 200g.
Pu'er Tea: 10 g
Rock Sugar: 30g

1. Soak the azuki bean in cold water for one hour.
2. Add 1500cc water in the pot, put the bean in the water and stew for two hours
3. Pu'er tea in boiling water for 30 seconds, discard the water, then add another 350cc boiling water for 5 minutes, pour the water in a container, repeat the procedure until get 1000cc Pu'er tea soup.
4. Add the 1000cc Pu'er tea soup into the bean soup, add the rock sugar,using low heat and stew for another 30 minutes.
5. seperate the bean soup into small bowls to serve. The drinker can also add milk or cream to the soup.

The azuki bean soup is a delicious drink, especially when it is cold from the refridgeritor. It is a popular drink for many people in China. The azuki bean can be replaced by Mung Bean.
